PMS COOKIES ARE A LONGTIME FAVORITE

I’ve been making these lovingly named PMS cookies for as long as I can remember. It started with spreading peanut butter on two crackers, sandwiching chocolate chips in the middle.

 Then it evolved into making the same thing, but with Marshmallow Fluff smeared onto one of the crackers, too. And then one day I added a pretzel twist to the middle of the whole thing and it was almost exactly what I wanted, but I still needed more chocolate.

I finally realized that taking a little extra time to melt chocolate and cover the little cracker cookie sandwich situation with said chocolate would get the job done.

It also meant that I could make them in larger batches and save them for when the cravings strike without having to put the effort in at those moments.

 

WHY ARE THEY CALLED PMS COOKIES?

Well, for one, the alternative would be No-Bake Chocolate Covered Peanut Butter and Fluff Pretzel Ritz Cracker Cookies and I refuse to do that to you.

 

Secondly, most women are very familiar with the strong cravings you get when you’re on your period, and a craving for something sweet and salty is one of the most well known.

 

There’s also the cliche in rom coms that a woman always goes for a pint of ice cream when she’s sad, and a bar of chocolate during that time of the month.

Well, you know what? THEY’RE BOTH TRUE. But frankly, I go for either on any given day – the craving is just stronger when I’m experiencing PMS.

 

WHAT DO PMS COOKIES TASTE LIKE?

If you’ve never tried this combination of flavors, it reminds me of a chocolate covered Nutter Butter with a scoop of fluff. If that doesn’t sound like the bomb dot com to you, you should probably see yourself out.

 

HOW TO MAKE THE PERFECT PMS COOKIES

Like I mentioned before, these are thankfully pretty simple – which is exactly what you need if you’re busy fighting with your hormones. The recipe is constructed for making 12 cookies, but you can easily make as many as you want because it’s a 2 cracker: 1 of everything else ratio.

You’ll just need to adjust the amount of chocolate to your liking!

 

Does this recipe require any real cooking skills of any kind? It does not.

Does this recipe include a bunch of high quality ingredients? It does not (though I’m very partial to all things Ghirardelli).

On a clean surface, preferably covered in wax paper or nonstick silicone mat(s), lay out your crackers, bottom sides facing up and spread about 1 teaspoon of peanut butter on 12 of the crackers.

Spread about 1 teaspoon of marshmallow fluff on the other 12 crackers.

Press a single pretzel into each of the fluff covered crackers.

Now top the fluff and pretzel cracker with a peanut butter covered cracker. Place your assembled “cookies” on a plate or cookie sheet and place it in the freezer for at least 5 minutes.

While the cookies are chilling, melt your chocolate according to package directions until fully melted and smooth – you can use a double boiler or your microwave.

Remove cookies from the freezer. Using a candy dipper or fork, dip each cookie in melted chocolate until fully covered.

Transfer the chocolate covered cookies to prepared wax paper or nonstick mat. I like to let the first coat of chocolate set, then drizzle a little more melted chocolate cross the top in a zigzag pattern to make them look a little bit fancier! Let them hang out there until they’ve completely set and the chocolate is no longer pliable to the touch.

 Told you it was easy! Now you just want to store them in an airtight container at room temperature, and you can keep them for up to a week without any problems. Frankly, you can probably keep them even longer, but I’ve never experienced that because these babies are gone so quick.

 

SWEET AND SALTY “PMS” COOKIES

These PMS cookies require no baking, and will satisfy all your sweet and salty cravings! Named PMS cookies because they’re perfect for that time of the month when premenstrual syndrome takes control of your appetite.

INGREDIENTS 

24 Ritz crackers

12 teaspoons peanut butter

12 teaspoons Marshmallow Fluff

12 pretzel twists

10-16 ounces chocolate melting wafers

SIMPLE INSTRUCTIONS  

On a clean surface covered in wax paper or nonstick silicon mat(s), lay out your crackers, bottom sides facing up.

Spread about 1 teaspoon of peanut butter on 12 of the crackers.

Spread about 1 teaspoon of marshmallow fluff on the other 12 crackers.

Press a single pretzel into each of the fluff covered crackers, then top with a peanut butter covered cracker. Place your assembled “cookies” on a plate or baking sheet and place it in the freezer for at least 5 minutes. While the cookies are chilling, melt your chocolate according to package directions until fully melted and smooth. Remove cookies from the freezer. Using a candy dipper or fork, dip each cookie in melted chocolate until fully covered, then place on prepared wax paper or nonstick mat. Let set completely before storing. Enjoy! Store in an airtight container at room temperature for up to 1 week.
